Authentic Amritsari Chhole with Attitude Chhole Masala & Amchur
Nothing pairs better with fluffy bhaturas than dark, aromatic Amritsari Chhole. Attitude Chhole Masala combines anardana, roasted cumin, black pepper, and dry ginger to give your gravy that irresistible street-style depth.
Ingredients:
- 1.5 cups Kabuli Chana (chickpeas, soaked overnight with a tea bag for natural dark colour)
- 2 tbsp Attitude Chhole Masala
- 1 tsp Attitude Amchur Powder (Dry Mango Powder for authentic tang)
- 1/2 tsp Attitude Mircha Powder
- 1/4 tsp Attitude Hing
- 2 onions (pureed or grated) & 3 tomatoes (pureed)
- 1 tbsp ginger-garlic paste
- 2 green chillies (slit lengthwise)
- 3 tbsp Mustard Oil or Ghee
- Salt to taste & fresh julienned ginger for garnish
Cooking Steps:
- Pressure cook the soaked chickpeas with the tea bag, salt, and water for 5–6 whistles until completely tender and melt-in-the-mouth soft. Discard the tea bag.
- Heat mustard oil in a heavy kadhai until smoking, then lower heat. Add Attitude Hing and ginger-garlic paste, followed by the pureed onions. Sauté patiently until deep golden brown.
- Add tomato puree, Attitude Chhole Masala, and Attitude Mircha Powder. Cook until the oil separates and the masala turns dark and rich.
- Add the cooked chickpeas along with their cooking liquor. Mash a small portion of the chickpeas against the side of the pan with the back of your ladle to naturally thicken the gravy.
- Add Attitude Amchur Powder and slit green chillies. Simmer on low heat for 10–12 minutes.
- Garnish with ginger juliennes and fresh coriander. Serve piping hot with bhature, kulche, or jeera rice!
