Fragrant Dum Biryani with Attitude Biryani Pulao Masala
A great biryani is an art of patience and balanced seasoning. Attitude Biryani Pulao Masala brings together mace, star anise, cardamom, cinnamon, and stone flower in perfect harmony so your biryani smells like a royal feast.
Ingredients:
- 2 cups Aged Basmati Rice (washed and soaked for 30 mins)
- 500g Marinated Vegetables or Chicken
- 2 tbsp Attitude Biryani Pulao Masala
- 1 tsp Attitude Super Garam Masala
- 1/2 tsp Attitude Kashmiri Mirch (for rich natural colour)
- 1/2 cup Fresh Whisked Curd
- 2 large onions (thinly sliced and fried crisp – Barista)
- Whole spices: Green cardamom, cloves, bay leaf, cinnamon
- Fresh mint and coriander leaves
- 2 tbsp Ghee & a pinch of saffron soaked in warm milk
Cooking Steps:
- Marinate your vegetables or chicken with curd, ginger-garlic paste, 2 tbsp Attitude Biryani Pulao Masala, Attitude Kashmiri Mirch, salt, and half the fried onions. Let rest for at least 30 minutes.
- Boil water with whole spices and salt. Cook the soaked rice until 75% done. Drain and set aside.
- In a heavy-bottomed pot, cook the marinated base on medium heat until tender and fragrant.
- Layer the partially cooked rice over the masala base. Sprinkle fried onions, mint, coriander, Attitude Super Garam Masala, ghee, and saffron milk on top.
- Seal the pot with dough or foil and a tight lid. Cook on dum over low heat (on a tawa) for 15–20 minutes. Rest for 10 minutes before gently fluffing and serving with raita!
