Restaurant-Style Shahi Paneer with Attitude Shahi Paneer Masala
Shahi Paneer is the crowning glory of celebratory North Indian dining. The secret to its velvety richness and inviting aroma is a smooth gravy balanced with Attitude Shahi Paneer Masala.
Ingredients:
- 250g Fresh Malai Paneer (cut into cubes)
- 1.5 tbsp Attitude Shahi Paneer Masala
- 1/2 tsp Attitude Haldi Powder
- 1/2 tsp Attitude Kashmiri Mirch
- 4 ripe tomatoes & 2 medium onions
- 12–15 cashew nuts (soaked in warm water)
- 2 tbsp Fresh cream or malai
- 2 tbsp Butter & 1 tbsp Oil
- 1/2 tsp Kasuri Methi (crushed)
- Salt & a pinch of sugar to balance acidity
Cooking Steps:
- Roughly chop tomatoes, onions, ginger, and garlic. Simmer with soaked cashews in 1 cup of water for 10 minutes until soft. Cool and blend into a super-fine, silky puree. Strain if desired.
- Heat butter and oil in a pan. Add Attitude Kashmiri Mirch on low heat for vibrant colour, then pour in the pureed gravy.
- Add Attitude Shahi Paneer Masala, Attitude Haldi Powder, and salt. Sauté on medium-low heat until the gravy thickens and glossy butter surfaces at the edges.
- Stir in fresh cream and a pinch of sugar. Gently slide in the soft paneer cubes. Simmer for 3–4 minutes so the paneer absorbs the gravy.
- Finish with crushed Kasuri Methi and an extra drizzle of cream. Serve with hot butter naan or tandoori roti!
